Cornish Game Hens With Sauerkraut

|Thyme sprig||1 Small|
|Garlic||1 Clove (5 gm)|
|Yellow onion||1 (Whole)|
|Carrot||1 , scraped|
|Water||1 Cup (16 tbs)|
|Sauerkraut||1 1⁄2 Pound|
|Wine vinegar||2 Teaspoon|
Rub Cornish game hens inside and out with salt and pepper.
Place them in deep baking dish with slice of bacon tied over the breast of each.
Tie herbs and garlic in a square of cheesecloth and put them in the dish.
Add onion, carrot, and water.
Bake, uncovered, in preheated very hot oven (500°F.) for 10 minutes.
Lower temperature to moderate (375°F.).
Cover hens with sauerkraut mixed with wine vinegar and sugar.
Bake, covered, for 30 minutes longer.
Meanwhile half-fry sausages.
Place sausages on top of sauerkraut after removing bag of herbs.
Bake, uncovered, for 15 minutes longer.
