German Style Apple Stew

Ingredients
  Apple juice/Apple cider 1 1⁄2 Cup (24 tbs)
  Water 1 1⁄2 Cup (24 tbs)
  Carrots 2 Medium, halved lengthwise, then cut into l/2-inch pieces
  Celery stalks 1 , sliced
  Sliced green onion 1⁄2 Cup (8 tbs)
  Cider vinegar 2 Tablespoon
  Instant chicken bouillon granules 2 Teaspoon
  Caraway seed 1 Teaspoon
  Pepper 1 Dash
  Skinless mahi mahi/Monkfish fillets 1 Pound
  Cabbage head 1⁄4 Small, finely shredded
  Apple 1 , cored and thinly sliced
Directions

In a large saucepan combine apple juice or apple cider, water, carrots, celery, onion, vinegar, bouillon granules, caraway seed, and pepper.
Bring mixture to boiling, and then reduce heat.
Cover and simmer for 10 minutes.
Meanwhile, cut fish into 1-inch pieces.
Carefully add fish to juice mixture.
Return just to boiling, and then reduce heat.
Cover and simmer gently for 2 minutes.
Add the cabbage and apple.
Return just to boiling, and then reduce heat.
Cover and simmer gently about 2 minutes more or till fish is done and vegetables are nearly tender
