Lebkuchen With Almond

  Beaten egg 1
  Packed brown sugar 3⁄4 Cup (12 tbs)
  Honey 1⁄2 Cup (8 tbs)
  Molasses 1⁄2 Cup (8 tbs)
  Brandy 3 Tablespoon
  Grated lemon peel 1⁄2 Teaspoon
  Lemon juice 1 Teaspoon
  All purpose flour 4 Cup (64 tbs)
  Ground cinnamon 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Ground cloves 1⁄2 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Ground cardamom 1⁄4 Teaspoon
  Chopped almonds 1⁄2 Cup (8 tbs)
  Chopped mixed candied fruits and peels 1⁄2 Cup (8 tbs)
  Lemon glaze 6 Tablespoon

In a bowl combine egg and brown sugar.
Beat till light and fluffy.
Mix in honey, molasses, brandy, lemon peel,and lemon juice.
Mix well.
Stir together the flour, cinnamon, baking soda, cloves, ginger, and cardamom.
Blend into molasses mixture.
Stir in almonds and can died fruits and peels.
Chill dough several hours.
Divide dough in half.
On a lightly floured surface, roll each half to a 14x9-inch rectangle;cutinto 3x2-inch cookies.
Bake on a lightly greased cookie sheet at 350°about 12 minutes.
Cool slightly; remove from cookie sheet and cool on rack.
While warm, brush with Lemon Glaze.
