Rueben Meat Loaf
|Ground beef||2 Pound|
|Soft rye bread crumbs||2 Cup (32 tbs)|
|Shredded sauerkraut||1 Can (10 oz), drained (1 Can)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Whole milk||1⁄4 Cup (4 tbs)|
|Thousand island salad dressing||1⁄4 Cup (4 tbs) (Commercial)|
|Caraway seeds||1 Teaspoon|
|Dry mustard||1 Teaspoon|
|Eggs||2 , beaten|
|Shredded swiss cheese||2 Ounce (1/2 Cup)|
Combine first 9 ingredients in a medium bowl; stir well.
Shape mixture into a 9- x 5-inch loaf; place on a rack in a lightly greased roasting pan.
Arrange bacon slices over loaf.
Bake at 350° for 1 hour and 30 minutes.
Sprinkle cheese over meat loaf, and bake an additional 5 minutes.
