|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Cold water||2 Teaspoon|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Unsweetened coconut||1⁄2 Cup (8 tbs)|
|White vanilla extract||1 Teaspoon|
|Low calorie whipped topping||1 Cup (16 tbs) (Prepared)|
Combine gelatin and cold water in small cup; set aside 10 minutes to soften.
Combine milk and coconut in blender, whip on High for 2 minutes, and pour into saucepan.
Stir and cook over low heat just to boiling, but do not boil.
Remove from heat.
Stir in softened gelatin, until completely dissolved, and add the vanilla.
Cool completely and fold coconut mixture into topping.
