Mandelsuppe German Almond Soup

Ingredients
  Onion 1 Tablespoon
  Butter 2 Tablespoon
  Unbleached flour 2 Tablespoon
  Chicken stock 2 Cup (32 tbs)
  Evaporated milk 1 Cup (16 tbs)
  Blanched almonds 3⁄4 Cup (12 tbs), ground
  Salt 1⁄2 Teaspoon
  White pepper 1⁄8 Teaspoon
  Almond extract/Rose water 1 Teaspoon
Directions

Saute onion in butter until slightly softened.
Sprinkle with flour, cook, stirring, 3 minutes and gradually add stock.
Cook and stir until smooth and slightly thickened.
Add milk and almonds; cover and simmer 30 minutes.
Adjust seasonings to taste with salt, pepper and almond extract
