Baked German Pancake
|Milk||1⁄2 Cup (8 tbs)|
|Vegetable oil||1 Tablespoon|
|Whole wheat flour||1 Cup (16 tbs)|
|Soy flour||1⁄2 Teaspoon|
|Brewers yeast||1 Teaspoon|
|Pureed cored peeled apples||1 Cup (16 tbs)|
|Finely chopped walnuts||1⁄4 Cup (4 tbs)|
|Nutmeg||1⁄8 Teaspoon, grated|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Honey/Maple syrup||1 Tablespoon|
1. Preheat the oven to 450 degrees.
2. Put the eggs, milk, salt, and oil in the container of an electric blender or food processor and blend or process until well mixed.
3. In a bowl, combine the whole wheat flour, soy flour, and brewer's yeast. Pour in the egg mixture and beat until smooth. Pour into a cold, oiled 9- or 10-inch pie plate.
4. Bake for 10 minutes. Reduce the oven temperature to 350 degrees and bake for 10 minutes longer, or until done.
