Baked German Pancake

Ingredients
  Eggs 2
  Milk 1⁄2 Cup (8 tbs)
  Salt 1⁄8 Teaspoon
  Vegetable oil 1 Tablespoon
  Whole wheat flour 1 Cup (16 tbs)
  Soy flour 1⁄2 Teaspoon
  Brewers yeast 1 Teaspoon
  Pureed cored peeled apples 1 Cup (16 tbs)
  Finely chopped walnuts 1⁄4 Cup (4 tbs)
  Nutmeg 1⁄8 Teaspoon, grated
  Brown sugar 1⁄4 Cup (4 tbs)
  Honey/Maple syrup 1 Tablespoon
Directions

1. Preheat the oven to 450 degrees.
2. Put the eggs, milk, salt, and oil in the container of an electric blender or food processor and blend or process until well mixed.
3. In a bowl, combine the whole wheat flour, soy flour, and brewer's yeast. Pour in the egg mixture and beat until smooth. Pour into a cold, oiled 9- or 10-inch pie plate.
4. Bake for 10 minutes. Reduce the oven temperature to 350 degrees and bake for 10 minutes longer, or until done.
