Bavarian Bratwurst Casserole
|Fresh bratwurst||1 Pound|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Red cabbage head||2 Pound, thinly sliced (1 Small)|
|Potatoes||2 Medium, pared and diced|
|Apples||2 Small, cored and diced|
|Caraway seed||1 Tablespoon|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Red wine vinegar||2 Tablespoon|
1. Remove bratwurst from casing and crumble into a 3-quart glass casserole. Add onion; stir. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 4 to 5 minutes at High, or until pink has disappeared from bratwurst; stir once. Drain.
2. Stir red cabbage, potato, apple, caraway seed, brown sugar, vinegar and salt into bratwurst mixture. Cook covered in microwave oven 18 to 20 minutes at High; stir 3 times.
