Spinach Salad With Raisins And Pine Nuts
|Spinach||1 1⁄4 Pound|
|White seedless raisins||3 Tablespoon|
|Pine nuts||3 Tablespoon|
|Lemon juice||3 Tablespoon|
|Olive oil/Sunflower oil||1⁄2 Cup (8 tbs)|
1 Pick out all the smallest, crispest spinach leaves.
2 Wash them well.
3 Dry in a salad spinner.
4 In a bowl, soak the seedless white raisins briefly in warm water to soften.
5 Drain well.
6 In 4 individual plates, arrange the spinach leaves.
7 Sprinkle seedless white raisins and pine nuts over each portion.
8 In a bowl, mix 1 tsp salt with the lemon juice until dissolved.
9 Beat in the oil with a small balloon whisk, adding a little at a time.
10 Season with freshly ground pepper.
11 Sprinkle the prepared dressing over the salad.
12 Serve at once.
