German Potato Salad
|Bacon slices||12 , diced and fried until crisp (Reserve 6 Tablespoons Drippings)|
|Onions||3 Medium, chopped|
|Cider vinegar||3⁄4 Cup (12 tbs)|
|Sugar||1 1⁄2 Tablespoon|
|Salt||1 1⁄2 Teaspoon|
|Potatoes||3 Pound, cooked, peeled, and cut in 1/4-inch slices|
1. Heat bacon drippings in a skillet. Add onion and cook until tender, stirring occasionally. Stir in vinegar, sugar, salt, and pepper; heat to boiling. Mix in bacon.
2. Pour over potato slices in a serving dish and toss lightly to coat evenly. Garnish with snipped parsley and paprika.
