Kartoffel Rosti

Ingredients
  New potatoes 2 Pound (large)
  Butter 5 Tablespoon
  Salt 1⁄4 Teaspoon
  Water 2 Teaspoon
Directions

Cook potatoes in boiling, salted water 25 to 30 minutes, or just until tender; drain, peel, and finely dice.
Melt butter in a 10 or 11-inch heavy frying pan, add potatoes and 1/4 teaspoon salt; stir to distribute butter evenly.
Press potatoes into an even layer in the pan.
Sprinkle with 2 teaspoons water, cover tightly, and cook over medium-low heat until crusty and golden at the bottom, about 15 minutes.
Slip spatula under potatoes to loosen all the way around.
