Hot German Potato Salad
|Bacon strip||6 (Slivered Bacon Fat Rendered From Bacon)|
|Onions||1⁄2 Cup (8 tbs), minced|
|Vinegar||1⁄3 Cup (5.33 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Parsley||1⁄4 Cup (4 tbs), chopped|
|Parsley||1 Tablespoon, chopped (For Garnishing)|
Scrub but do not peel potatoes.
Cook just until tender but still firm.
Slice while hot into shallow ovenproof dish.
If using bacon, saute bacon slivers in skillet, over medium low heat, and add onions, sauteing them in the bacon fat.
If not using bacon, heat oil in skillet and saute onions until golden but not brown.
Add vinegar, water and parsley to skillet, stirring to combine ingredients.
Salt and pepper to taste.
Pour dressing over hot potatoes and keep warm in oven until ready to serve.
Garnish with fresh chopped parsley.
