Cinnamon stars (Zimtsterne) are a traditional German Christmas cookie made from almonds, meringue, and lots of cinnamon! These are naturally gluten-free, too!
Egg whites | 2 | |
Lemon juice | 1/2 Teaspoon | |
Lemon zest | 1/2 Teaspoon | |
Sifted powdered sugar | 1 1/2 Cup (24 tbs) (plus more for rolling) | |
Cinnamon | 1 Teaspoon | |
Almond meal | 1 Pound | |
Slivered almonds | 1/2 Cup (8 tbs) (for garnish) |
GETTING READY:
Preheat oven to 275°F.
Line baking sheet with parchment paper.
MAKING:
In an electric mixer, beat egg whites until foamy and add lemon juice and lemon zest. Beat until it turns stiff.
Gradually add sugar, cinnamon and beat until glossy, stiff and peak forms.
Reserve ½ cup of this meringue mixture in a small bowl.
Add almond meal to remaining mixture and mix until it forms into soft dough. Refrigerate for 1 hour.
Sprinkle powdered sugar on parchment paper and place dough on it. Sprinkle more sugar and cover with another sheet. Press gently to make it 1/3 inch thick sheet and cut into stars.
Place cookie stars on greased cookie sheets and glaze with reserved meringue. Garnish with slivered almonds.
Pop into oven and bake for 25-30 minutes. Allow to cool completely before serving.
