Beer | 1 Cup (16 tbs) | |
Pork loin | 4 Pound | |
Kosher salt | 3 Tablespoon | |
Ground cumin | 1 Teaspoon | |
Pork lard | 1 Tablespoon | |
Onion | 1/2 Medium , sliced | |
Chopped garlic | 1/2 Teaspoon | |
Beer | 1 Cup (16 tbs) |
GETTING READY
1. Soak pork loin in german beer for 3 to 4 hours.
MAKING
2. Pull the loin and dry it completely.
3. Mix kosher salt with cumin and then rub it over the fat cap of the loin.
4. Heat dutch oven with 7 briskets underneath.
5. Saute onion in hot pork lard. Add garlic and saute that as well.
6. Place the pork loin, fat cap up, in the dutch oven. Pour beer on top.
7. Close the lid and place more briskets.
8. Cook until the internal meat temperature reaches upto 65 C.
SERVING
9. Slice and serve the meat with the sauce.
