Skirt steak | 1 1/2 Kilogram , trimmed and cut into pieces ((Entrana)) | |
Garlic | 2 Clove (10 gm) , finely chopped | |
Extra virgin olive oil | 2 Tablespoon | |
Chopped onion | 1/4 Cup (4 tbs) | |
Brandy | 4 Centiliter | |
White wine vinegar | 200 Milliliter | |
Beer | 200 Milliliter | |
Applesauce | 700 Gram | |
Sugar beet syrup | 4 Tablespoon ((Rubenkraut)) | |
Granulated garlic | 1 Teaspoon | |
Granulated onion | 1 Teaspoon | |
Sweet paprika | 1 Tablespoon | |
Smoked paprika | 1 Teaspoon | |
Coarse salt | 1 Teaspoon | |
Pepper | 1 Teaspoon | |
Bay leaves | 2 |
MAKING
1. Heat olive oil in a dutch oven. Saute garlic and onion.
2. Add entrana one piece at a time and stir it in.
3. Pour brandy, white vinegar and bay leaves. Mix thoroughly.
4. Drop in a mixture of sweet paprika, smoked paprika, granulated garlic, granulated onion, salt and pepper over the meat. Mix in applesauce or mashed apples as well.
5. Add in beer, followed by sugar beet syrup and mix it too.
6. Place the oven lid and then the charcoal on top. Let the meat cook for 3 hours at low heat.
7. Open the lid and cook until the sauce thickens.
SERVING
8. Pour over mashed potatoes and serve.
