Stir together sugar coffee gelatin and salt in small bowl. Pour boiling water over gelatin mixture stir until gelatin is dissolved. Stir in vanilla. If desired pour into mold. Refrigerate until firm about 3 hours. Spoon into dessert dishes or unmold on serving
