Litchi Salad

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Sugar 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Water 1 1⁄4 Cup (20 tbs)
  Vinegar 1⁄4 Cup (4 tbs)
  Fresh lemon juice 1 Tablespoon
  Finely shredded cabbage 1⁄2 Cup (8 tbs)
  Chopped celery 1 Cup (16 tbs)
  Chopped green pepper 2 Tablespoon
  Litchi/Canned litchi 12 , peeled and pitted
Directions

MAKING
1) In a saucepan mix gelatin, sugar, and salt thoroughly.
2) Stir in 1/2 cup of the water.
3) Place on low heat, and stir till gelatin is dissolved.
4) Turn off flame and mix remaining water, vinegar, and lemon juice.
5) Chill till slightly thick.
6) Add shredded cabbage, celery, green pepper, and fresh litchi fruit.
7) Transfer into 2-cup mold or individual molds.
8) Chill till firm.

SERVING
9) Unmold on serving plate. Garnish with watercress. Serve with salad dressing.
