Ingredients
  Stock 885 Milliliter
  Sherry 150 Milliliter
  Vinegar 75 Milliliter (Mix Of Tarragon, Malt, Chili Vinegar)
  Lime 1⁄2 , rind grated and juice extracted
  Carrot 55 Gram (1 Piece)
  Turnip 115 Gram (1 Piece)
  Onion 100 Gram (1 Piece)
  Celery stick 1
  Salt 1⁄2 Teaspoon
  Parsley stalk 4
  White peppercorns 10
  Gelatin 70 Gram
  Eggs 2 , whites and shell separated for use
Directions

1. Remove fat from stock.
2. Put all ingredients together into a strong pan.
3. Keep on fire and whisk till nearly boiling.
4. Allow to simmer for 30 minutes.
5. Strain through a scalded jelly cloth.
