Cranberry Gelatin Mold
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||1⁄2 Cup (8 tbs)|
|Hot water||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Ground cranberries||3 Cup (48 tbs) (Raw)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Diced apples||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Teaspoon|
|Fresh lemon juice||1⁄4 Cup (4 tbs)|
|Chopped pecans/Walnuts||1⁄2 Cup (8 tbs)|
Sprinkle gelatin over cold water.
Add hot water and stir to dissolve gelatin.
Add sugar; mix well.
Put cranberries through food grinder, using fine blade, and add to gelatin.
Add remaining ingredients.
Pour into 5-cup ring mold which has been rinsed in cold water.
Chill until gelatin is firm.
Unmold on bed of crisp lettuce leaves.
