Tomato Aspic With Cider

Ingredients
  Tomato juice 3 1⁄2 Cup (56 tbs)
  Celery stalks 1 , cut up
  Onion 1 , chopped
  Lemon 1⁄2 , cut
  Ground basil 1 Teaspoon
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Cayenne 1 Dash
  Unflavored gelatin 2 Tablespoon (2 Envelopes)
  Cider vinegar 1⁄4 Cup (4 tbs)
Directions

Combine tomato juice with vegetables and seasonings.
Cover and simmer over low heat for 20 minutes.
Strain.
Add gelatin softened in vinegar and stir until dissolved.
Pour into mold and refrigerate until firm.
If vegetables, fish, or meat are to be added, chill until aspic is of the consistency of unbeaten egg white; fold in vegetables, fish, or meat and pour into a lightly oiled mold.
Chill until firm.
