|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Boiling water||1 1⁄4 Cup (20 tbs)|
|Liquid sugar replacement||4 Teaspoon|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Lemon rind||1 Teaspoon, grated|
Sprinkle gelatin over cold water in small cup; set aside 10 minutes to soften.
Combine boiling water and softened gelatin in a 2 cup (500 mL) mixing bowl, stirring until gelatin is completely dissolved.
Add sugar replacement, salt, lemon juice and rind; stir to completely blend.
Refrigerate until set.
