Glistening Green Gelatin
|Water||1 3⁄4 Cup (28 tbs)|
|Carrot||1 Cup (16 tbs), coarsely grated|
|Celery||1 Cup (16 tbs), chopped|
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Green pepper||1 Teaspoon, minced|
|Lemon juice||1 Teaspoon|
|Raw spinach||2 Cup (32 tbs), shredded|
|Green onions||6 , chopped|
1. Combine gelatin and sugar in saucepan. Add 3/4 cup water. Heat, stirring constantly, until gelatin is dissolved. Remove from heat.
2. Stir in remaining water, vinegar, and lemon juice.
3. Chill mixture until partially set. Then fold in remaining ingredients.
4. Pour into a 1 quart mold or 7 individual molds. Chill until firm.
