Sparkling Apricot Gelatin

Ingredients
  Canned unsweetened apricot halves 16 Ounce (1 Can)
  Water 1⁄2 Cup (8 tbs)
  Gelatin 1 Tablespoon (Unflavored)
  Lemon juice 1 Teaspoon
Directions

1. Drain and puree apricots in blender or through a sieve. This makes about 1 cup of puree.
2. Combine water and gelatin in saucepan. Heat until gelatin is thickened. Remove from heat.
3. Add lemon juice and apricot puree. Mix well.
4. Add water and mix gently.
5. Divide equally into 4 molds or serving dishes. Chill until set.
