Zucchini With Tomatoes And Garlic
|Olive oil||1 Tablespoon|
|Parsley||1 Teaspoon, finely chopped|
|Garlic||2 Clove (10 gm), crushed|
|Gruyere cheese||1⁄2 Cup (8 tbs), grated|
Cut zucchini into thin rounds. Peel tomatoes and slice thinly. Heat the butter and oil and brown zucchini and tomato together. Add salt and pepper to taste and stir in sugar, parsley and garlic. Transfer to a shallow oven dish, sprinkle with grated cheese and bake in a moderate oven 180C (350F) until the cheese forms a golden crust.
