|Peppercorns||6 , crushed|
|Coarse salt||2 Tablespoon|
1 On a cutting board, crush the garlic, using a flat blade of a heavy chopping knife.
2 Remove the skins carefully.
3 Finely chop the garlic.
4 Combine the other ingredients and chop until they are reduced to a paste.
5 On the meat surface, evenly spread the marinade.
6 Allow to stand for 1 hour.
7 Gently scrape off the marinade from the surface, before cooking the meat.
