Roasted Garlic Lemon Dressing

Ingredients
  Whole garlic head 1
  Lemon juice 3 Tablespoon
  Oil 1 Tablespoon
  Water 1 Tablespoon
  Salt 1⁄8 Teaspoon
  Chopped parsley 2 Tablespoon
Directions

Wrap the garlic in foil and bake for 45 minutes, or until soft.
Cool slightly.
Squeeze the garlic from its skins into a blender or food processor.
Add the lemon juice, oil, water, and salt.
Blend or process until smooth.
Stir in parsley.
