Garlic Roasted Pork

Ingredients
  Pork loin roast/Fresh ham 2 1⁄2 Pound
  Garlic 2 Clove (10 gm), slivered
  Mixed dried herbs 1 Teaspoon (Crumbled Oregano, Thyme And Rosemary)
  Prepared mustard 2 Teaspoon
  Olive oil 3 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Sprinkle the slivers of garlic with the herbs, pressing to make them adhere.
Make a few cuts in the surface of the meat, and insert the herb-coated garlic.
Mix together the mustard and oil and brush it well over the meat.
Let it rest for an hour.
Then wrap the roast in aluminum foil, and cook in a preheated 350° F. [180° C] oven for about one and a half hours.
Turn off the oven and let the meat rest for about 15 minutes before removing it and unwrapping the foil.
Slice the meat quite thinly.
This roast is also magnificent cold.
