Cherry Tomato Basil And Garlic Confit

  Extra virgin olive oil 1 Cup (16 tbs)
  Whole garlic cloves 12 , peeled
  Salt To Taste
  Cherry tomatoes 10 Ounce (1 Basket, Best)
  Basil leaves 12 , cleaned
  Flavored oil 1 Tablespoon

1. Warm the olive oil and garlic in a saucepan over low heat for 5 minutes. Season with salt.
2. When the garlic is tender, add the tomatoes and cook for another 5 minutes or until the tomato skins begin to crack. Add the basil leaves and warm gently.
3. Spoon over the warm cod. Drizzle flavored oil around the fish.
