Spinach With Garlic And Pine Nuts
|Fresh spinach||2 Pound (ends trimmed and discarded)|
|Olive oil||1 Teaspoon|
|Pine nuts||2 Tablespoon|
|Garlic||4 Clove (20 gm), chopped|
1. Wash the spinach well and shake out the water. Heat a large saucepan over high heat and add the spinach. Cook for about 5-7 minutes or until tender, tossing frequently. Transfer the spinach to a colander and set aside.
2. Heat the saucepan over a medium flame and add the olive oil. When the oil is hot, add the pine nuts and chopped garlic and cook until both are golden, about 2 minutes. Return the spinach to the saucepan, toss to combine, and cook until heated through, about 2 minutes. Add salt and pepper to taste.
