Garlic Marinated Mushrooms
|Fresh mushrooms||2 Pound|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Cider vinegar||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Onion||2 Tablespoon, finley chopped|
|Garlic||2 Tablespoon, minced|
|Fresh parsley||1 Tablespoon, chopped|
|Dried oregano||1⁄8 Teaspoon|
Cover mushrooms with water in a large Dutch oven; add lemon juice, stirring well.
Bring to a boil; reduce heat, and simmer 1 minute; drain.
Combine vinegar and remaining ingredients, stirring well; pour marinade over mushrooms, and toss lightly.
Place mushroom mixture in a shallow container; cover and refrigerate 24 hours.
