Sauteed Pasta With Tomatoes And Garlic
|Olive oil||3 Tablespoon|
|Pasta||8 Ounce, broken in half (coil fideo or angel hair)|
|Canned diced peeled tomatoes||14 1⁄4 Ounce (1 can)|
|Tomato juice||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Garlic clove||4 Large, chopped|
|Dried oregano||1 Teaspoon|
|Chopped fresh parsley||1 Tablespoon|
Heat oil in heavy large skillet over high heat.
Add fideo and saute until brown, about 3 minutes.
Add tomatoes with their liquids, tomato juice, water, garlic and oregano.
Cover and simmer until fideo is tender, stirring occasionally, about 16 minutes.
Transfer to bowl.
Garnish with parsley and serve.
