Sauteed Pasta With Tomatoes And Garlic

Ingredients
  Olive oil 3 Tablespoon
  Pasta 8 Ounce, broken in half (coil fideo or angel hair)
  Canned diced peeled tomatoes 14 1⁄4 Ounce (1 can)
  Tomato juice 1 Cup (16 tbs)
  Water 1 Cup (16 tbs)
  Garlic clove 4 Large, chopped
  Dried oregano 1 Teaspoon
  Chopped fresh parsley 1 Tablespoon
Directions

Heat oil in heavy large skillet over high heat.
Add fideo and saute until brown, about 3 minutes.
Add tomatoes with their liquids, tomato juice, water, garlic and oregano.
Cover and simmer until fideo is tender, stirring occasionally, about 16 minutes.
Transfer to bowl.
Garnish with parsley and serve.
