This weekend I get to finally try out my new spit that my pa-in-law made for me. I did some Cornish Games Hens with a Apricot-Sriracha glaze and did it all on the Pit Barrel Cooker, Check it out.

Pit barrel all purpose rub | 3 Tablespoon | |

For glaze | ||
Soy sauce | 3 Tablespoon | |
Garlic cloves | 5 , minced | |
Apple cider vinegar | 1/3 Cup (5.33 tbs) | |
Mirin | 1/4 Cup (4 tbs) | |
Apricot preserves | 1 Cup (16 tbs) | |
Sriracha | 3 Tablespoon | |
Salt | To Taste | |
Pepper | To Taste |
GETTING READY
1. Assemble the skewing equipment as shown. Preheat apple wood in pit barrel.
MAKING
2. Rub each cornish game hen with the pit barrel rub, insert in the skewer one at a time, insert a lime half after each cornish hen. Hang the skewer in the pit barrel and cook for 2 hours.
3. In the meantime, in a saucepan, add soy sauce, minced garlic, apple cider vinegar, mirin, apricot preserves and sriracha,mix well, season with salt and pepper. Allow to reduce dor 20 to 25 minutes.
4. After 2 hours brush the hens with the prepared glaze, cook for another 45 minutes, glaze after every 10 minutes.
SERVING
5. Carve into pieces and serve with lime slices.
