Ingredients
  Red onion 1 Large, chopped finely
  Mixed pepper mayonnaise 1 Tablespoon
  Pickled gherkin 2 Medium
  Carrot 1 Cup (16 tbs), julienned
  Lettuce leaves 1 Cup (16 tbs), julienned
  Summer squash 1 Cup (16 tbs), julienned
  Zucchini 1 Cup (16 tbs), julienned
  Cheddar cheese with jalapeno and cayenne 1 Pound
  Wagon wheel pasta 2 Cup (32 tbs), cooked and drained
  Pot roast 1 Pound, julienned
For garnish
  Frisee lettuce 1 Medium, leaf
  Radicchio leaf 1 Medium, leaf
Directions

GETTING READY
1. Slice the pot roast and batonnet it.

MAKING
2. Mix all the ingredients in a broad mixing bowl.
3. On a plate arrange frisee and radicchio leaves.

SERVING
4. Spread the salad in the middle generously and serve.
