Raw Vegan Salad

Ingredients
  Mixed greens 10 Medium
  Radicchio 1 Cup (16 tbs)
  Pear 1 Medium
  Avocado 1 Medium
  Pine nut 1 Cup (16 tbs)
  Dried cranberry 1 Cup (16 tbs)
  Extra virgin olive oil 1 Cup (16 tbs)
  Apple cider vinegar 1 Tablespoon
  Red onions 3 Tablespoon
  Lime juice 1 Tablespoon
  Fresh parsely 1 Tablespoon
  Coconut nectar/Raw agave nectar 1 Tablespoon
  Salt and pepper 1 Tablespoon (as per taste)
Directions

MAKING
1. Finely shred the radicchio and cut the pear vertically into long slices.
2. Scoop the flesh out of avocado.
3. In a blender blend the dressing ingredients.

SERVING
4. In a serving dish, pile up radicchio, pear, avocado, cranberries and pine nuts.
5. Spread the dressing over and serve.
