How-to make Salmon Croquettes with a Cajun Remoulade Sauce. This is a simple recipe you can cook for a side or a main dish any day of the week.
For salmon croquettes
  Canned red salmon 2 Can (20 oz)
  Shallot 1 , minced
  Eggs 1
  Dijon mustard 1 Tablespoon
  Breadcrumbs 2 Tablespoon
  Lemon 1⁄2 , juice extracted
  Salt To Taste
  Pepper To Taste
  Extra virgin olive oil 1⁄2 Cup (8 tbs) (For deep frying)
For cajun remoulade sauce
  Mayonnaise 1⁄2 Cup (8 tbs)
  Celery stalk 1⁄2 , minced
  Scallion 1 , minced
  Parsley 1 Tablespoon, minced
  Capers 12
  Ketchup 1 Tablespoon
  Worcestershire sauce 1 Tablespoon
  Garlic 1 Teaspoon, minced
  Cayenne pepper 1⁄8 Teaspoon

1. In a large bowl combine the red salmon, shallot, egg, Dijon mustard, breadcrumbs, and lemon juice.
2. Season with salt, pepper and mix well.Make 4 croquettes from the mixture.
3. Add extra virgin olive oil to a pan and sauté over medium heat until the croquette is nicely browned and cooked through.
4. For the remoulade sauce – in a bowl combine the mayonnaise, celery, scallion, parsley, capers, ketchup, Worcestershire sauce, garlic, and cayenne pepper.
5. Season with salt and pepper and mix well.

6. Serve Salmon Croquettes with Cajun Remoulade Sauce.
