Scrambled Mustard Eggs
|Coarse mustard||1 Tablespoon (Meaux)|
|Cayenne pepper||1 Pinch|
Melt the butter in a small frying pan over low heat.
Add the mustard and cook for 3-4 minutes.
Whisk together the eggs with the cream, cayenne, and salt.
Pour the mixture into the pan and stir.
Cover and continue cooking for about 6 minutes, stirring occasionally.
Don't let the eggs get too firmâ€”they should be served soft.
Serve with toast.
