Scrambled Mustard Eggs

Ingredients
  Butter 2 Tablespoon
  Coarse mustard 1 Tablespoon (Meaux)
  Eggs 8 Medium
  Cream 1 Tablespoon
  Cayenne pepper 1 Pinch
  Salt 1 Pinch
Directions

Melt the butter in a small frying pan over low heat.
Add the mustard and cook for 3-4 minutes.
Whisk together the eggs with the cream, cayenne, and salt.
Pour the mixture into the pan and stir.
Cover and continue cooking for about 6 minutes, stirring occasionally.
Don't let the eggs get too firm—they should be served soft.
Serve with toast.
