Scrambled Eggs Deluxe
|Fresh mushrooms||3 Cup (48 tbs), sliced|
|Green onions||1⁄3 Cup (5.33 tbs), chopped|
|Garlic clove||1 Medium, minced|
|Canned artichoke hearts||14 Ounce, drained, halved (1 Can)|
|Eggs||6 , beaten|
|Cheddar cheese||6 Ounce, shredded (1 1/2 Cups)|
|Cooked ham||13 Ounce, cubed (2 1/2 Cups)|
|Seasoned dry bread crumbs||1⁄3 Cup (5.33 tbs)|
|Canned french fried onions||3 Ounce (1 Can)|
1 In a 12" x 7" baking dish, combine butter or margarine, mushrooms, green onions and garlic.
2 Cover with vented plastic wrap.
3 Microwave at 100% (HIGH) for 5 to 6 minutes or until onions are tender; stir after 3 minutes.
4 Stir in artichoke hearts, eggs, cheese, ham and bread crumbs. Mix well.
5 Cover with vented plastic wrap.
6 Microwave at 70% (MEDIUM HIGH) for 12 to 14 minutes or until eggs are almost set; stir after 6 minutes.
7 Top with French-fried onions.
8 Microwave, uncovered, at 100% (HIGH) for 2 minutes or until onions are warm.
9 Serve immediately.
