Currant Walnut Loaf

Ingredients
  Wholemeal flour 250 Gram, sifted
  Currants 50 Gram
  Baking powder 2 Teaspoon
  Soda bicarbonate 1⁄2 Teaspoon
  Walnuts 50 Gram, chopped
  Cherries 5
  Almonds 10 , flaked
  All spice 1 Pinch
  Demerara sugar 250 Gram
  Eggs 7 , separate white from yolk.

  Golden syrup 1 Tablespoon
  Salt To Taste
  Vanilla 2 Teaspoon
  Butter 325 Gram
  Sherry 2 Tablespoon
  Mango juice 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1) Preheat oven at 160C.

MAKING
1) In a bowl sift salt, flour, baking agents and spice together.
2) In a small bowl, cream butter with sugar and golden syrup until light.
3) Beat in egg yolks and add 2 tbsp flour and mix well
4) Gently fold in flour, currants and walnuts.
5) Stir in mango juice and sherry.
6) Beat the egg white until stiff. Fold it into the mixture.
7) Transfer into a lined and greased loaf tin.
8) With cherries, decorate top of loaf.
9) Bake the cake until firm at temperature 160C.
10) Take out the loaf and put on rack. Cool before slicing.

SERVING
11) Serve currant walnut loaf with hot beverages.
