Double Boiler Scrambled Egg And Potato

Ingredients
  Margarine 2 Tablespoon
  Peeled cooked potatoes 6 Ounce, diced
  Eggs 4 Medium, beaten
  Water/Potato liquid 3 Tablespoon
  Chopped fresh parsley 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper To Taste
Directions

Melt margarine in top of double boiler over boiling water.
Add potato and heat.
Combine eggs with liquid, parsley or chives, salt, and pepper.
Add to margarine-potato mixture.
Cook, stirring frequently, until done to taste.
Divide evenly.
