Combine eggs, yolks, salt, pepper, milk; mix well; stir in cheese.
In 9-inch skillet, melt butter, tilting skillet so bottom and sides are well covered.
Pour in egg-cheese mixture.
Cook slowly, gently lifting from bottom and sides with spoon as mixture sets, so liquid can flow to bottom.
Avoid constant stirring.
Cook until set but still moist.
Serve at once.
