  Onion 1 , chopped
  Celery stalks 4 , chopped
  Oil 1 Tablespoon
  Curry powder 1 Tablespoon
  Flour 1 Tablespoon
  Light stock/Water 1⁄2 Pint
  Fresh ginger root piece 1 Inch, finely chopped
  Ground ginger 1 Teaspoon
  Lemon 1 , juiced and rind grated
  Canned apricot halves 14 Ounce, drained
  Bananas 2 , peeled and thickly sliced
  Cooking apples 1 Pound, peeled, cored and quartered
  Raisins 4 Ounce
  Soured cream 1⁄4 Pint

Fry the onion and celery in the oil until golden.
Stir in the curry powder and flour and cook gently for 2-3 minutes, stirring constantly.
Mix the stock or water with the ginger and gradually stir into the pan.
Add the lemon juice, rind, apricots, bananas, apples and raisins.
Stir well and cook, covered, over low heat until the fruit is tender.
