Spiced! Fruit And Vegetables
|Onion||1 , chopped|
|Celery stalks||4 , chopped|
|Curry powder||1 Tablespoon|
|Light stock/Water||1⁄2 Pint|
|Fresh ginger root piece||1 Inch, finely chopped|
|Ground ginger||1 Teaspoon|
|Lemon||1 , juiced and rind grated|
|Canned apricot halves||14 Ounce, drained|
|Bananas||2 , peeled and thickly sliced|
|Cooking apples||1 Pound, peeled, cored and quartered|
|Soured cream||1⁄4 Pint|
Fry the onion and celery in the oil until golden.
Stir in the curry powder and flour and cook gently for 2-3 minutes, stirring constantly.
Mix the stock or water with the ginger and gradually stir into the pan.
Add the lemon juice, rind, apricots, bananas, apples and raisins.
Stir well and cook, covered, over low heat until the fruit is tender.
