Fairy Fingers

  Butter 2 Ounce
  Castor sugar 1 1⁄2 Ounce
  Single cream 2 Tablespoon
  Plain flour 2 Ounce
  Cornflour 2 Tablespoon
  Baking powder 1⁄2 Teaspoon

These are bite-size, crisp and not too sweet. Cream the butter and sugar together until soft. Beat in the cream. Sift the flour, cornflour and baking powder over the creamed ingredients and mix well together. Place the mixture in a piping bag fitted with a 1 cm (1/2 inch) plain nozzle. Pipe into 5 cm (2 inch) fingers on non-stick paper-lined baking sheets, leaving room for the biscuits to spread. Bake in a preheated moderate oven (190°C/375°F, Gas Mark 5) for about 12 minutes, or until firm to the touch and golden brown around the edges. Cool on a wire rack and store in an airtight tin. Serve dredged with icing sugar, if you like. Makes about 20
