Ingredients
  Pimentos 4
  Tomatoes 4 Large, skinned and sliced
  Olive oil 2 Tablespoon
  Lemon juice 1 Tablespoon
  Seasoning To Taste
  Onion 1 Small, chopped
  Finely chopped parsley 1 1⁄4 Tablespoon (Heaped)
Directions

A gay and flavourful hot weather starter.
Cut the pimentos into strips and arrange on a platter, then top with tomato slices.
Beat the oil, lemon juice and seasoning well together and pour over the pimentos and tomatoes.
