Scrambled Eggs

  Eggs 8
  Salt 1 Teaspoon
  Tomato 1 , peeled, seeded, chopped
  Olive oil 2 Tablespoon
  Garlic 1 Clove (5 gm), peeled
  Chopped onions 1⁄4 Cup (4 tbs)
  Chopped serrano ham/Other smoked ham 1⁄2 Cup (8 tbs)
  Chopped chives 1 Tablespoon

Beat eggs with fork until frothy.
Beat in salt.
Heat oil in shallow skillet.
Add garlic; cook 5 minutes.
Discard garlic.
Add onions, tomato, and ham; saute 5 minutes.
Add eggs; cook, stirring frequently, until set.
Spoon eggs onto serving platter; garnish with chives.
