|Garlic||1 Clove (5 gm), peeled|
|Chopped onions||1⁄4 Cup (4 tbs)|
|Chopped serrano ham/Other smoked ham||1⁄2 Cup (8 tbs)|
|Chopped chives||1 Tablespoon|
Beat eggs with fork until frothy.
Beat in salt.
Heat oil in shallow skillet.
Add garlic; cook 5 minutes.
Add onions, tomato, and ham; saute 5 minutes.
Add eggs; cook, stirring frequently, until set.
Spoon eggs onto serving platter; garnish with chives.
