Chicken Chili

Ingredients
  Butter 15 Milliliter (1 Tablespoon)
  Onion 1 , chopped
  Celery stalks 2 , chopped
  Leek 1 Small, washed and chopped
  Diced chicken 375 Milliliter (Raw, 1.5 Cup, Dark Meat Preferably)
  White beans 750 Milliliter, soaked in water overnight (3 Cups)
  Crushed chilies 1⁄4 Teaspoon (1 Milliliter)
  Oregano 1⁄2 Teaspoon (2 Milliliter)
  Cumin 1⁄2 Teaspoon (2 Milliliter)
  Allspice 1⁄2 Teaspoon (2 Milliliter)
  Banana peppers 2 (Hot)
  Hot chicken stock 1 Cup (16 tbs)
  Grated mozzarella cheese 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Place butter, onion, celery, leek, salt and pepper in casserole.
Cover and microwave 5 minutes.
Mix well and add raw chicken, beans (with liquid), seasonings and banana peppers.
Pour in enough hot chicken stock to cover by 2 in (5 cm).
Cover casserole and microwave 75 minutes.
Stir at least 2 or 3 times.
