Scrambled Eggs With Dried Shrimps
|Dried shrimps||2 Tablespoon|
|White pepper||To Taste|
|Peanut oil||2 Teaspoon|
|Ginger sherry||1⁄2 Teaspoon|
|Sesame oil||2 Drop|
|Chopped spring onion||1 Teaspoon|
Cover the shrimps generously with boiling water and leave for 3 minutes.
Beat the eggs with a tiny pinch each of salt, Ve-Tsin and a few shakes pepper.
Drain the shrimps and rinse them to dislodge any sand.
Heat 1 teaspoon oil in a small frying-pan.
Add the shrimps, another pinch salt, Ve-Tsin, few shakes pepper, sugar, sherry and sesame oil and cook for 1 minute.
Heat the remaining oil in another pan.
Add the beaten eggs.
Turn the hot shrimps on top and stir together to form into an omelet roll.
