Cashews Galore Fudge Bars
|Non stick vegetable cooking spray||1|
|Cashews||1 1⁄3 Cup (21.33 tbs), coarsely chopped|
|Sweetened condensed milk||14 Ounce (1 Can)|
|Chopped semi sweet chocolate||2 Cup (32 tbs)|
|Unsweetened chocolate||2 Ounce, chopped|
|Pure vanilla extract||1 Teaspoon|
1. Preheat oven to 350°. Line 8 X 8 X 2-inch square baking pan with aluminum foil. Lightly coat with nonstick cooking spray. Spread cashews on baking sheet.
2. Bake cashews in 350° oven, stirring occasionally, until fragrant, about 8 minutes.
3. In medium, heavy saucepan, bring condensed milk to simmering over low heat, stirring constantly. Remove from heat. Add both chocolates, cover, and let stand 5 minutes. Stir until smooth. Stir in 1 cup cashews and the vanilla. Scrape into prepared baking pan, spreading in an even layer. Sprinkle on remaining 1/3 cup cashews, pressing lightly into fudge to adhere.
4. Cover and refrigerate until firm, at least 2 hours Cut into 36 squares. Store in airtight container, refrigerated. Serve at room temperature.
