Two Tiered Fudge

Ingredients
  Sugar 2 1⁄4 Cup (36 tbs)
  Milk 1 Cup (16 tbs)
  Unsweetened chocolate square 3 Ounce (Three 1 Ounce Each)
  Light corn syrup 1 Tablespoon
  Butter 2 Tablespoon (No Substitutes)
  Vanilla extract 1 Teaspoon
  Chopped nuts 1⁄2 Cup (8 tbs)
  Sugar 2 1⁄2 Cup (40 tbs)
  Half and half cream 1⁄2 Cup (8 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Chopped candied cherries 1⁄3 Cup (5.33 tbs)
Directions

Butter the sides of a heavy 2-qt saucepan.
In a saucepan, combine the first four ingredients.
Cook and stir over medium heat until sugar is dissolved.
Bring to a boil, stirring constantly, until mixture reaches 236° (soft-ball stage).
Remove from the heat.
Add butter and vanilla (do not stir).
Cool to 110° without stirring.
Beat vigorously by hand until fudge becomes thick and begins to lose its gloss, about 10 minutes.
Immediately spread into a greased 9-in square baking pan; set aside.
For second layer, combine sugar, cream, milk, corn syrup and salt in a buttered 2-qt saucepan.
Cook and stir over medium heat until sugar is dissolved.
Bring to a boil, stirring constantly until mixture reaches 236° (soft-ball stage).
Remove from the heat.
Add butter and vanilla (do not stir).
Cool to 110° without stirring.
Beat vigorously by hand until fudge begins to thicken; add cherries.
Continue beating until fudge becomes thick and begins to lose its gloss, about 10 minutes.
Immediately spread over first layer.
Score into squares while still warm.
Refrigerate until firm.
Cut.
Store in an airtight container at room temperature.
