Fudge Rice

Ingredients
  Milk 2 Cup (32 tbs)
  Cooked rice 1 Cup (16 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Flour 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Eggs 2 , beaten
  Vanilla 1⁄2 Teaspoon
  Chopped walnuts 1⁄4 Cup (4 tbs)
Directions

Scald milk in heavy saucepan.
Stir in rice.
Mix sugar, flour and salt.
Whisk into scalded milk.
Cook, stirring over medium heat, for 5 minutes.
Stir small amount of hot mixture into eggs.
Then stir back into saucepan.
Cook stirring for 1 minute.
Add vanilla.
Pour into shallow, 1-1/2 - quart buttered, baking dish.
Bake at 300 degrees for 30 minutes until knife inserted comes out clean.
Cool slightly.
Spread with fudge topping.
Sprinkle with nuts.
Let stand until firm.
