Real Chocolate Fudge
|Sugar||2 Cup (32 tbs)|
|Cocoa||1⁄4 Cup (4 tbs)|
|Light corn syrup||1⁄4 Cup (4 tbs)|
|Milk||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
Mix sugar and cocoa.
Add corn syrup and milk.
Set over heat and stir until all sugar is dissolved.
As mixture begins to boil, wipe sides of pan with wet cloth to remove any undissolved sugar.
Let boil hard until it reaches a soft ball stage (240Â°).
Add butter, but do not stir.
Let cool, add vanilla, and beat until candy is stiff.
Stir in pecans and pour onto a greased 8- or 9-inch platter.
